Pineapple Coconut Cake
This is a wonderful and easy cake to make for any occasion! My mom absolutely adores this cake!
1 box of lemon cake mix
1 can of crushed pineapple
3.5 oz package of instant vanilla pudding
1/2 c. milk
16 oz cool whip
2 1/2 c. shredded coconutMake the cake mix according to the box and pour it into a big 11x17 cookie sheet or two 13x9 dishes. Bake according to box directions. (The box didn't say how long to bake the big sheet, so I did it on 350 for 20 minutes, and it was perfect.) Remove from oven and poke holes all over the cake with a fork. When it's still warm spoon the pineapple and juice on top of the cake. Let it cool completely. Mix instant pudding with 1/2 c. milk until nice and smooth. Fold in your cool whip. Spread it over the top of the pineapple, and then sprinkle coconut all over the top. Refridgerate for several hours or over night. Feeds about 20-25 people.

I've been neglecting my blogging duties for quite some time but today I will attempt to work up a small post. This is in response to a workshop requested by my job at the Augusta County Library. Hi Augusta County Library staff!!
http://www.augustacountylibrary.org/
We here at the Craigsville Library Station are gearing up for a very busy December Holiday month. We will be having our Gingerbread workshop for the kids on the 15th of December.
On the home front, I've decorated my house with Christmas lights, put up our tree and will now sit back and enjoy all the things this holiday season brings. My birthday is in December and also my anniversary (married 38 years December 21st)...busy busy time for me.
I checked out the other two blogs, http://en.wordpress.com and http://new.tumblr.com/
I find Blogger the easiest to navigate. Probably because I started with this one...
And on that note...enjoy the show!
